I’ll admit, I’m not the best baker 👩‍🍳 but I am getting better 😊 ⠀ ⠀ These ANZAC cookies are a big hit with the fam and are swooped on as soon as they come out of the oven. I’d have none left in couple of days if I didn’t hide the cookie jar 🤣⠀ ⠀ Being home bound and trying to avoid the packaged supermarket varieties with questionable ingredients, I have been setting aside some time to bake my own treats. ⠀ ⠀ What’s important to me is that I know exactly what’s in the ones I bake myself. ⠀ ⠀ With ingredients already in my pantry, these cookies are made with the simplest of ingredients. Within 30 minutes I can whip up a batch of 24 chewy and crunchy cookies 😋 ⠀ ⠀ Ingredients:⠀ 1 cup rolled oats⠀ 1 cup flour⠀ 1 cup brown sugar ⠀ 1/2 cup desiccated coconut ⠀ 125 softened butter⠀ 2 tbsp golden syrup ⠀ 1/2 tsp bi-carbonate of soda⠀ 2 tbsp water ⠀ ⠀ Method :⠀ Preheat oven to 160 degrees Celsius⠀ Mix all ingredients together, form into balls (should make 24) and place on baking tray.⠀ Bake for 12-15 minutes 😋

It’s world 🐝 day! ⠀ ⠀ I had a lost little bee buzzing around our back garden today. I think he was searching for a flower to land on, but our flowering plants have stopped blooming now that the cooler weather has hit 🙁 He finally made his way over the fence so I hope he found what he was looking for.⠀ ⠀ These little guys are so important to our ecosystem 🌱⠀ ⠀ Unfortunately, #bees all over the world are disappearing at alarming rates.⠀ ⠀ Major causes are disease and changes to their environment with the alarming increase in toxic chemicals being sprayed on our crops and plants like herbicides and pesticides 😔 ⠀ ⠀ Pesticides don’t discriminate so if you need to get rid of some pests in your garden, try and opt for a bee-friendly solution. If you can make a homemade pest control spray, even better. ⠀ ⠀ Because bees pollinate a third of all our crops, this is our problem too. My daily mantra ☝️ ⠀ ⠀ When things are going well, this is relatively easy. Other times not so much. ⠀ ⠀ It's so easy to become discouraged, disconnected and disappointed but a positive outlook is a choice that we can always make. ⠀ ⠀ There is so much going on right now, so much uncertainty and just when I thought we could get single-use plastics under control, due to the appearance of Covid-19, for our safety there has been a surging demand for single-use disposable face masks and the ramped up production of hand-sanitiser in little plastic bottles 🤦‍♀️ These face masks are already being discarded inappropriately and appearing washed up on remote beaches around the world 👎⠀ ⠀ We are going through life-changing overhauls at the moment and so I guess, for now, this will be the new norm. I'll try not to have an anxiety attack when I see rows upon rows of sanitiser bottles in my local supermarket, I'll keep positive and keep doing positive things ✌
